Remember the curried pistachios I shared two weeks ago? I’m still eating them!
Okay, not those exact ones because I made more, but I’m still so obsessed. They’re awesome!
I made a big batch when I came home yesterday afternoon after a weekend in Montreal with my two besties for a girls getaway. We had the BEST time and definitely treated ourselves. From massages to delicious meals to sightseeing, spa treatments and more, we had an absolute blast!
But now it’s back to real life and healthier meals. Since beautiful summer produce is in full swing, and my amazing husband ran to the grocery store when I got home (I know, he’s a keeper!) and picked up beautiful, sweet peaches. I just knew they would be the perfect pairing to the savory curried pistachios.
I kept the rest of the salad super simple, because honestly I was ready for a light meal after the delicious indulgences of the weekend, like brunch at Le Cartet. Seriously if you are in Montreal, GO HERE!! I mean, look at this:
You can add anything you’d like to spruce this salad up, but rest assured it is perfectly delicious with mother nature’s full flavors and a drizzle of olive oil and pinch of balsamic vinegar. C’est magnifique!
- 2 cups greens
- ½ peach, sliced
- ¼ cup cooked lentils
- ¼ avocado, sliced
- Sprinkle of curried pistachios
- 1 teaspoon olive oil
- ½ teaspoon balsamic vinegar
- Add greens to plate or bowl.
- Top with peach, lentils, avocado and pistachios.
- Drizzle with olive oil and vinegar.
