Hi Friend! How are you? Are you enjoying your summer? I can’t believe it’s rapidly coming to an end. Where did it go?!
For us it’s been flying by. And if I’m being honest, I’ve been happy to be busy and distracted. It’s given me an excuse to avoid blogging.
Returning back to my full time job and balancing being a full time mom has been an adjustment. I have been struggling to find time to blog, to take care of me and to motivate myself to start doing both.
And I have NOT been eating how I should. There’s been a severe lack of vegetables and a significant uptick in carbohydrates. Sure, I’m not eating fast food or deep fried oreos or ice cream for dinner (except one night when I did eat ice cream for dinner). But I haven’t been eating at the level of health which I know I can or should. And to be honest, I feel ashamed by it.
Who am I to share a healthy recipe with you, when I’m eating cold rice and beans for dinner on the couch? Who am I to encourage a healthy lifestyle when I haven’t run in 4 months?
But then I got an email from the amazing Alexandra Covucci, and it was the exact message I needed to hear. It said stop hiding.
Stop hiding in fear. Stop hiding yourself.
And it’s so true. How often do we hide ourselves? Hide by wearing a bigger shirt. Hide by not wearing a bathing suit. Hide by not saying what we mean. We do it all the time, in so many ways.
So today I’m coming out of hiding. I’m coming back to blogging – and I’m also sharing my meal plan for the week. This is something I haven’t done in quite some time (mainly because rice and beans 4 times isn’t much of a meal plan) but I hit the grocery store this morning and now I’m ready to rock and roll.
Here’s what’s on the menu this week:
Lunches: Dinner leftovers and sandwiches (either Curried Chickpea Sandwiches or cashew butter & berry jam).
Sunday – Grilled Halibut with Mango Salsa and Corn, Zucchini and Red Pepper Salad
Monday – Chicken Stir Fry
Tuesday – Breakfast Tacos
Wednesday – Crock Pot Peach Pulled Pork (switching chicken for pork)
Thursday – Using leftover pork for Kimchi Tacos
Friday – Coconut Chickpea Curry with Vegetables (whatever’s left in the fridge)
Snacks: Carrots with edamame hummus, peaches, plums
So there it is! The plan for the week.
Now I’m heading to the kitchen to start testing some recipes that have been in my head for a while. I know you’re gonna love them, so check back soon!
